How To Make Rendang


Do you know Rendang? Rendang is a spicy meat dish which originated from the Minangkabau ethnic group of Indonesia, and is now commonly served across the country. One of the characteristic foods of Minangkabau culture, it is served at ceremonial occasions and to honour guests. Also popular in Malaysia, Singapore, Brunei, the southern Philippines and southern Thailand, rendang is traditionally prepared by the Indonesian
community during festive occasions. Culinary experts often describe rendang as: 'West Sumatra caramelized beef curry'. In 2011 an online poll by 35,000 people held by CNN International chose Rendang as the number one dish of their 'World’s 50 Most Delicious Foods (Readers' Pick)' list. Here, I will share the recipe of Rendang that is famous food in Indonesia


Ingredients:
1 kg of meat without fat, cut and wash then drain
3 grated old coconuts, make into thick to coconut milk

seasoning (mashed/ground) :
20 shallots
10 cloves of garlics
2 cm of ginger
1 ounce of red chilli ground/minced
1 teaspoon of pepper

Galangal, crushed
3 lemongrass stalk, crush the white part
5 lime leaves
3 bay leaves
2 tumeric/saffron leaves, torn

1. braise the meat with a ground seasoning , let the meat broth out and wait until the broth of the braise dried
2. pour the coconut milk, then put all of the spices except complementary seasonings and stir until blended/well
3. stir the coconut milk until boiled
4. reduce the heat, cook until the oil  of the meat and the spices comes out.
5. cook and stir so it will be not  sticky, cook until the spices slightly dry and brown
6. serve with warm rice
